Pick what you are making. The shortlist builds as you answer.

How the shortlist is ranked, limits and sources
What this does not do. It gives no doses, grades or use levels, and it cannot see your protein level, solids, minerals, water or shear, all of which change how a hydrocolloid behaves. Treat the top of the list as the first trial arm, not the answer. Regulatory status is not covered: check each ingredient against the rules for your product and market.

How it ranks

  • Each approach has a score for how well it suits each product, each job, each pH band and each heat step, plus an adjustment when the product must look clear or is stored frozen. The scores come from the sources below.
  • The total decides the order. Approaches that clearly clash with your pH or process drop down the list rather than disappearing, and the clash is shown.
  • pH bands are rough: neutral is about 6 and above, mildly acidic about 4.6 to 6, acidic below about 4.6.
  • The From SpecSol card follows SpecSol's own product data, as Specsy describes it.
