2. What you want to do

Pick the application

Choose where the phosphate goes, then whether you want to choose one or cut it down.

Method, limits and sources
What this does not do. It gives no doses, and it does not tell you whether a phosphate is permitted in your product or how much: that is set by the food regulations for your product and market, so check them. The P2O5 figures cover only the phosphates you enter, not the phosphorus naturally in the food.

Method

  • Each salt's phosphorus, sodium and potassium content is calculated from its chemical formula using standard atomic weights.
  • P2O5 is phosphorus expressed as phosphorus pentoxide: each 2 atoms of phosphorus count as one P2O5, which is how many regulations and specifications state phosphate.
  • The guide's statements come from the studies below; where none is cited, it is standard food technology.
